Method: While heating the oil in a large pan, finely chop the red onion and the garlic. Soften the onion and garlic in the oil for about 5 minutes. While sautéing the onion and garlic, peel and roughly chop the Roma tomatoes. Add the tomatoes and slowly bring to a boil. Cover and simmer for about 8 minutes. If using fresh oregano, strip the leaves from the stems and chop. Add the oregano to the tomato sauce along with the sugar, wine vinegar and seasonings. Simmer for a further 2 minutes. Serve with your choice of pasta. |
