BC Hot House Fresh Roma Tomato Sauce

Serves 4

3 tbsp.
Extra-Virgin Olive Oil
1
Red onion
2-3
Cloves garlic
2 lbs.
BC Hothouse Roma Tomatoes
2
Stems Fresh Oregano
or 2 tsp.
Dried Oregano
1/2 tsp.
Salt
1/4 tsp.
Sugar
1/4 tsp.
Freshly ground Black pepper
1 tsp.
Red Wine Vinegar

Method:
While heating the oil in a large pan, finely chop the red onion and the garlic. Soften the onion and garlic in the oil for about 5 minutes.

While sautéing the onion and garlic, peel and roughly chop the Roma tomatoes. Add the tomatoes and slowly bring to a boil. Cover and simmer for about 8 minutes.

If using fresh oregano, strip the leaves from the stems and chop.
Add the oregano to the tomato sauce along with the sugar, wine vinegar and seasonings.
Simmer for a further 2 minutes.

Serve with your choice of pasta.
