BC Hot House Campari and Sweet
Bell Pepper Roast Chicken

BC Hot House Red Peppers

BC Hot House Yellow Pepper

BC Hot House Orange Pepper
2 lbs.
BC Hot House Campari Tomatoes,
coarsely chopped
One
4-lb.
Roasting chicken
2 tbsp.
Olive oil
2
Medium onions, thinly sliced
6
Large cloves garlic, finely chopped
1/2 cup
Dry white wine
Pinch salt
Freshly ground pepper to taste

Method:
Rub the chicken with a little olive oil.
Sprinkle salt and pepper and roast at 350&Mac251;F. (180&Mac251;C) for about 90 minutes or until tender.
Remove skin and cut chicken into large serving pieces.

While the chicken is cooking, heat the olive oil in a heavy skillet and add peppers, onions and garlic. Sauté for a few minutes, then add tomatoes, salt, pepper and wine.

Simmer 20-25 minutes or until sauce thickens.
Add chicken pieces and simmer for a few more minutes.
Serve hot immediately

Serve with rice and plenty of french bread to soak up the tomato juices.
