BC Hot House Greek Salad

BC Hot House Cocktail Tomatoes, Chopped

BC Hot House Sweet Bell Pepper, Thinly Sliced
1
BC Hot House Long English Cucumber, chopped
¼
Red Onion, medium diced
1 Medium onion, thinly sliced
½ cup
kalamato olives, pitted and rough chopped
½ cup Feta cheese, crumbled

Dressing:
1 tsp Red wine or sherry vinegar 
1 Tbsp Extra virgin olive oil 
1 tsp. Basil
1 ½ tsp. Fresh oregano
Salt to taste
Black pepper, fresh ground to taste

Method:

Mix all ingredients together in a bowl. Be sure not to over salt as feta can be quite salty.

Let salad sit for 10-15 minutes before serving to allow the flavours to come out.

Serve as a side dish in the summer with grilled chicken or mixed with tuna in a pita for a quick lunch. It can also be served up in the summer with a crusty baguette.
