BC Hot House Long English Cucumbers
1 cup         
Plain yogurt, Greek or Balkan style
1
fresh garlic clove, minced
1 ½ tbsp
fresh dill, chopped
1
lemon, juiced
1 tbsp.
extra virgin olive oil
¼ cup
Kalamato olives, sliced
½ tsp
Kosher salt
2 tbsp.
Olive oil
Black pepper, fresh ground to taste
 

Method:
Wash and cut cucumber lengthwise. Leave skin on.
Grate cucumber into strainer and let extra water drip off.
Mix cucumber and salt in a bowl.

Add all other ingredients except the olives and olive oil to the cucumbers.

Mix well.

Preparation:
Garnish with olives and olive oil.

Serve as a duo with pita bread or fresh vegetables.

Makes one medium sized bowl.
